Sir Robin of Locksley® VSOT – Navy Strength, Old Tom Gin – Banyuls Edition. This one was a 1 AM moment of genius for John, head distiller. The “un-aged” VSOT is special as it is, but for good measure John thought we should chuck some of it into a wine barrel and see what happens. The second of our Limited Barrel Aged Expressions was finished in a Banyuls cask, a maderised Grenache based dessert wine from near the Pyrenees. The gin takes on port-like raisin notes, and the colour is a beautiful rose gold. There are only 300 bottles of this extraordinary gin.
